

Chicken Tortilla Soup with Lime

Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, finely chopped
- 1 tbsp dried basil
- 1 tsp dried oregano
- 1 tsp chili powder
- 1 bottle (1 liter) Montellier sparkling lime water
- 2 cups chicken broth
- ¼ cup fresh cilantro, chopped
- 1 can (540 ml) black beans, rinsed and drained
- 1 can (796 ml) diced tomatoes
- 1 ½ cups shredded chicken
- 1 cup frozen corn
- Salt and pepper, to taste
For the toppings:
- ½ cup shredded cheddar cheese
- 1 avocado, sliced
- 1 cup corn tortillas (chips or grilled tortilla pieces)
- ¼ cup sour cream
- Some pickled jalapeños (optional)
- 1 lime, cut into wedges
- Some fresh cilantro leaves
Steps:
- In a large pot over medium-high heat, heat the olive oil and sauté the onions for 5 minutes until browned.
- Add the garlic, basil, oregano, and chili powder, and continue cooking for 1 to 2 minutes.
- Add all the ingredients for the soup, bring to a boil, and then let it simmer for 25 minutes.
- Serve the soup in bowls, then top with cheese, avocado, tortillas, sour cream, pickled jalapeños, and lime wedges.
